Grinders
These Stainless Steel Grinders, fabricated by Koss Industrial to USDA & WDA Sanitary Standards, are capable of grinding a variety of soft & hard cheeses.
They feature removable augers, optional face plates & grinder head plates (with several hole diameter options) as well as quick disassembly & release latches on head plates. These easy-to-clean machines (with custom interior & exterior finishes) come in various sizes; 5, 8, 11 and 14G grinders, and feature sized motors & horsepower to suit your process. Grinders are available single or twin screw (one or two augers)!

620 Mixers
Koss Industrial, Inc. creates custom machinery for a variety of production techniques, including Pasta Filata Cheese-Making. 620 Mixers use hot water to cook Italian, pasta filata style cheeses in a continuous operation.
Designed and fabricated to USDA & WDA Sanitary Standards, these machines are CIP-able (check out Koss CIP Systems) with available options such as direct steam injection or steam bundles.
Materials and finishes suit the process; the machines feature Teflon coated augers and a textured body for non-stick surfaces.

Pasta Filata Cheese-Making
(Italian: “spun paste”) Pasta filata is a cheese-making technique named for its distinctive stretching step (filatura), where the cheese is kneaded/stretched in hot water/whey.
The filatura creates the soft, elastic, stringy texture that characterizes pasta filata cheeses. Mozzarella and provolone are two popular examples from this group of Italian cheeses also known as ‘stretched-curd’, ‘pulled-curd’ or ‘plastic-curd’ cheeses.

What the Heck is Whey Protein?
Whey protein is a mixture of globular proteins isolated from whey, the liquid material created as a by-product of cheese production. During the cheese making process, the whey is often kept in a separate cheese vat so it can be utilized in supplements and other products. Some preclinical studies in rodents have suggested that whey protein may influence glutathione production and possess anti-inflammatory or anti-cancer properties; however, human data are lacking.
Whey protein is commonly marketed and ingested as a dietary supplement, most commonly in the form of whey protein powder. Various health claims have been attributed to it in the alternative medicine community. Whey is a common allergen, and is responsible for a significant proportion of cow milk allergies. In people without milk allergies, whey protein is generally considered safe.
My Precious
For the past fifteen years I’ve worked at a cheese processing factory without incident—until last week. I was taking off my gloves to go on break and my wedding band came off with them. I reached out quickly to try to grab it, but it was too late; it had fallen into one of the massive vats.
I immediately ran downstairs to shut off the machine and try to retrieve the jewelry. The ring isn’t expensive, but it’s been in my family for six generations, so it has some substantial sentimental value. Luckily the stainless steel strainer in the bottom of the vat caught the ring and my family’s precious heirloom was preserved.
Dairy Industry Looks to Rebound from Crisis
Virtually every industry has experienced hardships due to the current economic crisis, and the dairy industry isn’t an exception. Many farmers maintain that the current crisis was the worst in history for the industry. But despite the trials and tribulations that farms have undergone in the last year and a half, it appears as if they are primed to turn the proverbial corner.
Milk prices hit startling low levels last year, but it appears that prices are stabilizing as the rest of the economy continues to recover. The Dairy Industry Advisory Committee expressed a sense of optimism during their meetings earlier this month. By the end of the year, they hope to have a proposal that outline ways to stabilize prices further and plan for prolonged prosperity.

Blender
Koss Industrial, Inc. designs and fabricates stainless steel blenders. These blenders are used for volume mixing. Pictured here is a twin screw ribbon blender Koss manufactured. This ribbon blender was designed with CIP-able construction. The screws in this unit are reversible, which is beneficial for unloading and various blending procedures.
