Culinary steam assemblies are critical components to any process in contact with food products. This is the system that is responsible for the culinary steam factor creating the steam to be suitable for direct contact and/or injection into food products or the surfaces that contact the foods. Because of this contact of steam, culinary steam must meet all of the applicable codes of appropriate regulatory agencies (i.e. USDA, FDA, etc.).
Some examples of processes requiring the use of the culinary steam assembly are for the direct heating of product in a process cheese cooker, the heating of water to be re-circulated in a continuous type mozzarella or provolone curd mixer, making cottage cheese types, with direct steam injection, & and similar heating applications or processes where steam is contacting the product.
