We provide you with one main control panel (configurable & scalable) and a separate high voltage motor panel. Having a separate high voltage panel helps keep the PLC cool & promotes safety by reducing unnecessary exposure to the higher voltage.

We offer touch screen operation (push button available). Touch screen operation enables the inclusion of safety features in the programming. It makes operation easy. Touch screen operation is ideal for use in a production line as it is a ‘user friendly’ interface. Operators are able to easily navigate the production line and its individual machines. With an image of the machine accompanying its specific controls, precision is easier than ever.

We do programming! Controls can be programmed to offer multiple recipes steps, ensuring consistency by reducing human input. Utilize batch control; it organizes activities/functions specifically, ensuring consistency.

The model shown here is the 5S-10, Koss Industrial’s 10# single screw Table Top Cooker. The sample port’s design makes taking samples a breeze with the directed flow and the feet allow you to adjust the machine’s height to suit you. A Table Top Cooker makes an excellent addition to any product development process!

These Stainless Steel Grinders, fabricated by Koss Industrial to USDA & WDA Sanitary Standards, are capable of grinding a variety of soft & hard cheeses.

They feature removable augers, optional face plates & grinder head plates (with several hole diameter options) as well as quick disassembly & release latches on head plates.  These easy-to-clean machines (with custom interior & exterior finishes) come in various sizes; 5, 8, 11 and 14G grinders, and feature sized motors & horsepower to suit your process. Extruders transfer cheese from cooker to molder, finishing the addition of grain structure, in pasta filata cheese-making.

The machines are available CIP-able (see Koss Industrial, Inc.’s CIP Systems) and are designed and fabricated to USDA & WDA Sanitary Standards. The interior body is Teflon coated, the exterior body bead blasted or polished. The machine is available with sanitary adjustable ball feet or casters for mobility, an electric or hydraulic drive option, as well as an optional cart for the extruder head.

Pasta Filata Cheese-Making

A Cooker Mixer Stretcher (CMS) is similar to a 620 mixer, but with two additional chambers separated by an adjustable dam which controls flow rate. The two additional chambers have arms to stretch the cheese during the filatura step of the pasta filata cheese-making technique, which creates the soft, elastic stringy texture that characterizes pasta filata cheeses.

Koss Industrial CMS machines can handle up to 4,000 lbs/hr and are designed/fabricated to USDA & WDA Sanitary Standards. The interior body is Teflon coated, the exterior body bead blasted or polished, the CMS is fully CIP-able. Steam Injection (for cooking) is among the customizable options available. The CMS also features removable chambers, for ease of Teflon reapplication.

(Italian: “spun paste”)  Pasta filata is a cheese-making technique named for its distinctive stretching step (filatura), where the cheese is kneaded/stretched in hot water/whey.

The filatura creates the soft, elastic, stringy texture that characterizes pasta filata cheeses. Mozzarella and provolone are two popular examples from this group of Italian cheeses also known as ‘stretched-curd’, ‘pulled-curd’ or ‘plastic-curd’ cheeses.

Technological advances in refrigeration and food preservation have made an abundance of products readily available the likes of which people never would have dreamed of hundreds of years ago. One of the most important innovations, especially for the dairy industry, has been pasteurization. This process, which was developed by Louis Pasteur in the mid-19th century, is what allows us to have access to a variety of fresh, safe dairy products.

Pasteurization doesn’t destroy all of the pathogenic organisms in a substance, but rather reduces the number so that it is less likely to cause disease. Pasteur and his colleague, Claude Bernard, originally developed the process for use in wine and beer, but today it is most notable in milk. The process is quite simple: the product is simply heated to a certain level for a specific amount of time, which kills many of the antigens and increases its shelf life.
