Cheese Press
There are a lot of inventions that were created to make lives easier. It is interesting to know that some inventions were kept alive by traditions starting centuries ago. Without certain invention we wouldn’t have what we have today. Cheese is one of those inventions.

Mozzarella di Bufala
Mozzarella di Bufala or buffalo mozzarella is delicious cheese made from the milk of water buffalos. The Italian city of Aversa is where buffalo mozzarella originated. Although buffalo mozzarella is made elsewhere, Italy is home to a $430 million a year buffalo mozzarella industry, with 16 percent of the cheese sold abroad.
To make buffalo mozzarella, cheese curds must be created by adding rennet to the water buffalo milk. Once the curds are firm they are cut into large pieces and are stirred over heat so the curds separate from the whey. When the whey is separated, the mozzarella cheese is put into a cheese hoop where the curds firm into a ball. At this point the curds achieve a pH level of 5.2 or 5.5 and can be kneaded into the consistency we consider mozzarella cheese.
A Lesson of Playing by the Rules
I had to learn the hard way that it’s not always best to play hide-and-go-seek outside. On my 8th birthday, my parents threw me a fabulous party at our house. There were colorful streamers and balloons everywhere and an ice cream cake. We had a piñata and a bouncy castle; all of the things that a child could wish for on their birthday celebration. However, the day took a turn for the worse when we started up a game of hide-and-seek in the backyard.
I remember my friend Michelle counting to 30 as we all dashed to find the very best hiding place. We weren’t allowed to leave the backyard, but I was determined to not be found first. So I bent the rules just a little bit and wandered into the neighbor’s yard to seek out my place of hiding. Before I knew it I was trapped in some kind of stainless steel enclosure. And the worst part was nobody came outside of the boundaries to look for me until about an hour later.
What the Heck is Whey Protein?
Whey protein is a mixture of globular proteins isolated from whey, the liquid material created as a by-product of cheese production. During the cheese making process, the whey is often kept in a separate cheese vat so it can be utilized in supplements and other products. Some preclinical studies in rodents have suggested that whey protein may influence glutathione production and possess anti-inflammatory or anti-cancer properties; however, human data are lacking.
Whey protein is commonly marketed and ingested as a dietary supplement, most commonly in the form of whey protein powder. Various health claims have been attributed to it in the alternative medicine community. Whey is a common allergen, and is responsible for a significant proportion of cow milk allergies. In people without milk allergies, whey protein is generally considered safe.

Our Burgeoning Dairy Endeavor
A few years ago my wife and I sold our home in the Hamptons and decided to purchase a small farm in our home state of Nebraska. After living in suburban areas for most of our lives, we were ready to reconnect with the pastoral pleasures of the Midwest. Since we’re getting older now, we didn’t want the full rigors of farm life, but we didn’t want to be sedentary all day either.
The homestead came with a small barn, so we decided to focus on raising cows and creating our own dairy products. As I said, we didn’t want much work, so we only bought enough cows to supply ourselves and some of the locals with milk and other dairy products. We started out with the basics, but our small enterprise has blossomed and we recently invested in some new cheese processing equipment.

When I was in elementary school we used to always have a day where we would use old-country methods to create essential goods.
