Pasta Filata Cheese-Making
(Italian: “spun paste”) Pasta filata is a cheese-making technique named for its distinctive stretching step (filatura), where the cheese is kneaded/stretched in hot water/whey.
The filatura creates the soft, elastic, stringy texture that characterizes pasta filata cheeses. Mozzarella and provolone are two popular examples from this group of Italian cheeses also known as ‘stretched-curd’, ‘pulled-curd’ or ‘plastic-curd’ cheeses.

Custom Tube & Pipe Branching

Method
• Use a pulling process to branch connect direct from a full run of material
• Entire operation performed on one machine
• Elliptical hole cut from outside the pipe, port is pulled to size
• Port is trimmed or faced true for a perfect butt weld to be performed
Reasons to use a Pulled Port:
• Most effective method for tubing fabrication
• Significantly reduces number of joints in a pipe run
• Lowers material costs
• Lessens fabrication time
• Limits material handling
• Lowers inventory
• Normally no restrictions on locations of pulled ports (orientation & locations nearly limitless pending on run diameter & port size)
• Fatigue is not caused (cold formed, no intense amount of heat created)

COP Tanks
Here at Koss Industrial, Inc. we think you should be able to clean how you want. That’s why we design and fabricate highly customizable COP tanks to suit your unique application. Some of our standard sizes (manufactured from 12GA, 304 stainless steel 2B material):
- 4, 6, 8, 10, & 12 ft. Lengths
- 117, 140, 185, 231, & 276 gal. Capacities (1″ below rim)
- C1-3, C1-7.5, C2-7.5, C2-10, & C2-15 Pump Sizes Solid C-HP
Standard equipment includes (but is not limited to): Stainless> Capillary Tube Well, Check Valve (after steam valve), In-Line Steam Injector Device, Ball Feet, and Sanitary Pump (with painted motor) and Self-Acting Brass Steam Valve.
Optional equipment: Swivel Casters, Drain Valve/Port (in front of pump inlet), Stainless Wire Hanging Basket, upgrade to Stainless Motor, Electric Heat, LKH pump, Single/Double Manifold(s) and Cover(s) (split or single).

Regulating & maintaining temperature is a breeze with Hot Water Sets!

Koss Industrial’s hot water sets are designed & fabricated to USDA & WDA Sanitary Standards and are constructed from durable stainless. Heat Exchanger has 3A symbol. We design & fabricate hot water sets to meet the customer’s unique needs.
Available Options include: various material finishes, controls for hot water set, skid/wall mounting, different styles of expansion tanks, insulation, heat exchangers (ASME or U-Tube; 8, 10, 12 in. U-Tube Heat Exchangers operating above 15 psig mawp will be ASME stamped)

Koss Grinders
Koss Industrial, Inc.‘s Stainless Steel Grinders, fabricated to USDA & WDA Sanitary Standards, are capable of grinding a variety of soft & hard cheeses. They feature easy-to-remove augers as well as a variety of optional face plates & grinder head plates (with several hole diameter options) and quick disassembly & release latches on head plates.
These easy-to-clean machines come in a variety of sizes; 5, 8, 11 and 14G Grinders with single or twin screw auger action.
Some of the standard features are adjustable tab feet, multiple hole extrusion plates (44%-57% open), motor & gear drives as well as fully polished screws. Some of the optional features are casters, CIP-able hook-ups, a pre-chop above the augers (turning cold/very hard blocks into a more manageable consistency) and Koss’ adjustable ball feet!

Tanks for Any Application
CIP, COP, scrape, starter, balance, hardening, legal PMO, processors, rectangular, storage (tanks & silos), sub-chemical… those are some of the tanks Koss Industrial, Inc. creates.
There are a variety of shapes & sizes that range from 1-3,000+ gallons. Units are designed & manufactured at our facility to customer specifications, designed & constructed to USDA & WDA Sanitary Standards from 304, 316, Hastelloy, or AL6XN. We offer complete custom fabrication of any style vessel (we do ASME Pressure Vessels) with unlimited features – custom agitation is available: swept, scraped or dual. We also offer #4/#7 polish or glass bead finishes as well as installation & reconditioning services.
Koss Cookers
Koss Industrial, Inc. has over 30 years of experience fabricating batch cookers, custom designed and fabricated to meet customer needs. Constructed from heavy-duty stainless steel, there are several models, from the 20 lb. lab size to the 2,000 lb. twin screw. Built to USDA & WDA Sanitary Standards they are CIP-able & constructed to handle difficult products.
